This winter I froze my surplus stock of fresh, locally-grown spinach. Taken straight out of the freezer, I blended it with some frozen fresh celery and mint leaves with a pear and soya milk. The result? A delicious and cold, energy-boosting smoothie.

Ingredients (serves 1)

150 ml of soya milk (you can freeze this too)

Large handful of frozen, fresh spinach leaves

Small handful of frozen, fresh mint leaves

1 x frozen celery stalk cut into small pieces

1 pear of apple cut into small pieces (not frozen)

Method

Blend all the ingredients together long enough until you have a creamy, frothy and very tasty smoothie.

Note: I bought a smoothie machine that is powerful enough to blend ice. Make sure you do the same because a normal blender might not be robust enough.
